Chicken Breast with Chick Peas, Tomatoes and Spinach

Just the dinner for a busy fall day, make this dish when you want something easy but fabulous. Chicken and chick peas pack plenty of protein to fill you up and fresh spinach and canned tomatoes provide much needed vitamins and  lycopene to keep you feeling fit as a fiddle. Did I mention that this dinner is also delish?

It’s that easy: This is one of those meals that just sits in your pantry and fridge just waiting to me thrown together. If you don’t have canned chick peas, just use white beans or butter beans. Don’t have spinach? Just use arugula, Swiss Chard or baby kale. Needless to say, if you don’t have chicken, you could always use pork chops or tilapia. The trick to this dish is to use whatever you have on hand. Be prepared to feel chef-like.

Chicken Breast with Chick Peas, Tomatoes and Spinach

Start to finish: 20 minutes Hands on time: 15 minutes

4 boneless, skinless chicken breasts Salt and freshly ground black pepper 2 tablespoons olive oil, divided 1/2 red onion, diced 2 cloves garlic, minced 1 teaspoon dried basil or oregano 1 bag (5 oz) baby spinach One 15 oz can diced tomatoes One 15 oz can chick peas, drained 1/2 lemon cut into 4 sections

Salt and pepper the chicken breasts.

Heat 1 tablespoon of the olive oil in a large skillet over medium-high heat. When the oil shimmers, add the chicken to the pan and brown it for 3 minutes. Turn the chicken over and brown the other side for another 3 minutes. Transfer the chicken to a plate. It won’t be cooked through yet.

Add the remaining olive oil to the hot skillet along with the onion, garlic and basil. Saute for about 2 minutes or until the onion begins to soften. Add half the spinach and toss lightly until it wilts. Add the remaining spinach along with the tomatoes and chicken peas. Bring to a simmer and return the chicken to the pan, nestling it into the liquid. Cover and cook for 5 minutes or until the chicken is cooked through. Taste and adjust the seasoning with more salt and pepper if needed.

Divide the chicken and bean mixture among 4 heated plates with a squeeze of lemon over the top. Serve hot. Extra Hungry: How about adding a diced zucchini along with the onions and garlic. Or just drizzle a few good slices of bread with olive oil, toast in your toaster and then rub with a clove of garlic for instant garlic bread.

In the glass: A Pinot Noir from Mark West would elevate this dish to week-end status.

How to Care for your new baby chickens in Sherburne, New York Baby chicks are very adorable and also hard to resist, but it's best to prepare for their arrival before you get them. Prepare first by collecting not just the appropriate products, yet also the correct knowledge to look after them. Raising baby chicks is fairly basic, you just need to offer them with the following: A clean as well as warm habitat Lots of food as well as water Interest as well as love Environment Your environment could be a straightforward box, fish tank, cat provider, or guinea pig cage. Line it with old towels and also blankets (with no loosened strings!) to start, as well as after a few weeks make use of straw over paper. Keep in mind: Avoid making use of only newspaper or various other slipper surface areas-- or your chicks legs could grow misshapen. You likewise require something to serve up food and also water in, such as a chicken feeder as well as water meal from the feed shop, or a pickle jar cover for food and also a pet dog bird water dispenser from a pet dog store. Also, as the chicks age you could present a perch into the habitat to obtain them educated on setting down. Heat To keep your chicks heat you have to provide them with a warmth resource. This can be as simple as a 100 watt light bulb in a reflective clamp design light from an equipment shop, or an infrared reptile warmth light bulb likewise work very well (my recommendation). Chicks require this heat 24/7 up until their downy fluff is replaced with feathers (which can use up to 2 months). The recently hatched need a temperature in between 90 as well as 100 levels, and also weekly this could be lowered by about 5 degrees or so. The warmth source should get on just one side of the cage to allow chicks an array of temperatures. The chicks are your ideal thermometer- if they are hiding in the other corner of your warmth lamp, you need to decrease the temperature level. If they are surrounding each other under the heat (not simply curling up), you need to add some warmth. Home cleaning Tidiness is crucial and it maintains your chicks healthy. Make certain to change the bed linen often and also constantly offer clean food and also water Food and also water. Chicks grow quite fast which needs plenty of clean food as well as water. Provide sufficient in any way times and examine typically to stop dehydrated and also starving chicks. Chick food is various compared to grown-up chicken food, and it can be found in both medicated and non-medicated varieties. Feed chick food for the initial 2 months, after that switch to a grower food (~ 17 % protein) for an additional 2 months, and afterwards to a slightly reduced protein feed or a level feed (if you have layers). Soil Some chicks like to obtain a running start on taking dirt baths, while others will not use up that activity up until they are older. If you have the area in your chick room, introduce a tray of sand or filth for them to shower in. Interest and love There are a few benefits to hanging out with your chicks. First off, they will probably bond with you and also not run away as grownups. Second, if you examine your chicks daily and watch their behavior, you can catch ailment or various other problems earlier. Keep an eye out for wheezing, hopping, or other undesirable indicators. Be sure to also look at their poop, as diarrhea could bring about matted plumes as well as stopped up cloaca. Finally, it is very important to watch out for social issues, such as the tiniest chick getting badgered. Vacant nest disorder So your chicks are currently totally feathery and its time for them to leave the safety and security of your house and move outside right into a coop. Look into our part on chicken coops to get more information about cages and correct coop environments.
